super yummy, Vegan blueberry and oat muffins - I eat one for breakfast every day!

Recipe Ingredients for Blueberry Oat Muffins - Happy Herbivore

1.5 cup Whole Wheat Pastry Flour
1/2 cup dry Oats, Rolled, Thick
1 tsp Baking Soda
2 tsp Baking Powder
24 tsp Sugar
1 tsp Cinnamon, Ground
1 serving Ground Ginger Spice
1/4 tsp Salt
1 cup Organic Applesauce
1/4 cup Original

Recipe Directions for Blueberry Oat Muffins - Happy Herbivore

Combine all dry ingredients and whisk well. Add applesauce and syrup and combine with a wooden spoon until just moistened - don't overmix. Fold in blueberries. Spoon batter into prepared muffin cups (greased or with paper liners) no more than 3/4 of the way full. Bake at 350 degrees for 20-24 minutes, until a toothpick inserted comes out smooth.
