Make loaf or large muffins. Do not thaw frozen berries.

Recipe Ingredients for Blueberry Oat Bread

2 cups all-purpose flour
1 cup rolled oats
1 cup sugar
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon allspice
3/4 cup low-fat milk
1/2 cup butter or margarine melted
1 tablespoon grated orange peel
2 eggs
1 1/4 cups fresh or frozen blueberries

Recipe Directions for Blueberry Oat Bread

  1. Combine dry ingredients in mixer bowl. Add milk, butter, orange peel, & eggs. Attach bowl & flat beater to mixer. Turn to STIR speed & mix about 30 seconds. With spoon, gently stir in blueberries.

  2. Spoon batter into 9x5x3-inch baking pan that has been greased on the bottom only. Bake at 350 degrees for 55 to 65 minutes, or until toothpick inserted in center comes out clean. Cool in pan 10 minutes. Remove from pan & cool completely on wire rack.

  3. For muffins: make 1 batches of batter, put in greased muffin pans, & cook for 45 minutes or until toothpick inserted in center of muffin comes out clean. Cool in pan 10 minutes & remove from pan to cool on wire rack. Store in stay fresh containers or baggies while still warm.

  4. Hint: to keep blueberries suspended throughout the bread or muffin if using fresh blueberries rinse then roll in flour lightly before adding to batter following instructions & if frozen do not rinse only roll in flour lightly before adding to the batter.

  5. Yield: 12 large muffins
