Healthy Blueberry Oat/Bran Muffins. You can substitute oat bran for ground oat meal (oat flour).

Recipe Ingredients for Blueberry Oat/Bran Muffins

1 cup old fashioned oats
1/2 cup flaxseed meal
2 tbs corn starch
1 tsp Stevia
1 tsp cinnamon
1/4 tsp salt
1 tsp baking powder
1/3 cup Egg Whites
1 tsp maple extract
3/4 cup plain non-fat yogurt
1 cup frozen blueberries

Recipe Directions for Blueberry Oat/Bran Muffins

  1. Combine dry ingredients

  2. Combine wet ingredients

  3. Combine wet and dry; mix well

  4. Spray muffin pans with non stick spray

  5. Bake for 25 - 35 min at 350 F*

  6. *Check with a toothpick around 25 min. Don't over-bake or they'll be too dry.
