Blueberry muffins with added bran and flaxseed.

Recipe Ingredients for Blueberry Oat Bran Muffins

1 cup frozen blueberries
1 1/2 cup all purpose flour
1/2 cup steel cut oats
1/4 cup bran flakes
1/4 cup flaxseed meal
1/2 tsp salt
1 tsp baking soda
1 1/2 tsp cinnamon
1/4 cup canola oil
1 large egg
1/4 cup skim milk
1/3 cup dark brown sugar

Recipe Directions for Blueberry Oat Bran Muffins

  1. Mix together dry ingredients and set aside (flour, bran, flaxseed, salt, baking soda, and cinnamon)

  2. Beat together liquid ingredients (egg beaters, oil, brown sugar, and soymilk)

  3. Fold together dry and wet ingredients

  4. Fold in blueberries and walnuts

  5. Add equal amounts of batter to muffin tin

  6. Bake at 400 degrees for 20 minutes or until tops are lightly browned
