Whole wheat breakfast muffins loaded with blueberries and a satisfying nutty crunch.

Recipe Ingredients for Blueberry Nut Muffin

1/2 cup butter
1/2 cup white sugar
1/2 cup brown sugar
2 large eggs
1 1/8 cup buttermilk
1/2 tsp lemon zest
1 tsp lemon juice
2 cup whole wheat flour
1 tsp baking soda
1 tsp salt
1 tsp Baking Powder
2 cup blueberries
1 cup pecans, chopped

Recipe Directions for Blueberry Nut Muffin

  1. Preheat oven to 350 and grease muffin pans.

  2. In a large bowl cream butter and sugars. Add eggs one at a time mixing well. Add lemon zest, lemon juice and buttermilk.

  3. In a medium bowl whisk together whole wheat flour, baking soda, baking powder and salt. Add to buttermilk mixture, stir with wooden spoon or spatula until just combind.

  4. Fold in blueberries and pecans.

  5. Fill muffin tins 2/3 of the way full and bake at 350 for 24 minutes, or until golden brown and spring back when touched. Immediately remove to wire rack to cool.

  6. Enjoy!
