Blueberry muffins modified from Cooks Illustrated Best Blueberry Muffins

Recipe Ingredients for Blueberry muffins with splenda

2 cups blueberries
1 1/8 cups splenda
1 teaspoon sugar
2 1/2 cups all-purpose flour
2 1/2 teaspoons baking powder
1 teaspoon salt
2 eggs
4 tablespoons butter
1/4 cup applesauce
1 cup buttermilk
1 1/2 teaspoons vanilla

Recipe Directions for Blueberry muffins with splenda

  1. Preheat oven to 425 degrees.

  2. Cook 1 cup blueberries and 1 teaspoon sugar over med. heat until reduced to 1/4 cup. Set aside to cook 10-15 minutes.

  3. Melt butter and set aside to cool.

  4. Combine flour, baking powder, and salt in bowl.

  5. In separate bowl, whisk eggs and splenda until smooth. Whisk in buttermilk, melted butter, vanilla and applesauce.

  6. Fold wet ingredients and other cup of blueberries into dry ingredients. Do not overmix.

  7. Spray muffin tins with nonstick spray. Divide batter between 15 muffin tins. Place a small amount of cooked blueberry mixture onto each muffin. Swirl in with a chopstick or knife blade.

  8. Bake 15-19 minutes until golden.
