Blueberry muffins for a quick on the go breakfast

Recipe Ingredients for Blueberry Muffins

3/4 c. all-purpose flour
3/4 c. whole wheat flour
1/3 c. sugar
1/2 tsp. salt
2 tsp. baking powder
1/3 c. canola oil
1 egg
2/3 c. 2% milk
1 c. blueberries, fresh

Topping:
2 T. brown sugar
2 T. oats
1/2 t. cinnamon

Recipe Directions for Blueberry Muffins

  1. Combine the flour, sugar, salt, and baking powder. Add the oil, egg, and milk. Stir to combine. Fold in the blueberries. You can crush a handful of them to help distribute some of the juices into the batter if you'd like. Fill each muffin cup with about 1 Tbsp. batter.

  2. Combine the brown sugar, oats, and cinnamon for the topping. Sprinkle the muffins with the sugar mixture. Bake at 400 for 10-14 minutes or until a toothpick inserted in the center of a muffin comes out clean.
