Blueberry Muffins Recipe

From the alli recipe book. You could substitute apple sauce for the oil to lower calories and fat and you could skip on the yogurt if you want. Just know what you're doing or else these muffins aren't going to be well made. The main ingredients are: wheat flour (or all purpose), baking powder, some type of sweetener (honey/ sugar), some type of liquid (milk), some type of oil (or apple sauce), and of course blueberries!(or some other berry unless you want it plain). I mixed the cranberry muffin recipe with the blueberry muffin recipe so there's like some ingredients here that you could choose between rather than having both (i.e. sugar/honey).

Recipe Ingredients for Blueberry muffins

1 1/3 cup whole wheat flour
1/3 cup wheat germ
1 tbs baking powder
3/4 cup Silk vanilla soy milk
1/3 cup sugar
1/8 cup light brown sugar
1/6 cup honey
2 tbs canola oil
1 teaspoon vanilla extract
1 egg
2 cups blueberries
1 ounce or 3 tbs Light 'n Fit nonfat vanilla yogurt
1/2 teaspoon salt

Recipe Directions for Blueberry muffins

  1. Preheat oven 400 degrees F. In a medium bowl, mix flour. wheat germ, and salt.

  2. In a large bowl, combine egg, sugar, honey, yogurt, oil, and vanilla extract.

  3. Whisk together until consistent (or beat with electric mixer on high for 2 minutes.)

  4. Reduce speed to low and alternately beat in flour mixture and milk. Beat until well mixed.

  5. Gently stir in blueberries.

  6. Coat a 12 cup muffin pan with nonstick cooking spray.

  7. Divide batter evenly among the muffin cups, filling them about two thirds full.

  8. Bake 400 degrees F for 20 minutes or until a toothpick inserted into the center of a muffin comes out clean.

  9. Cool on wire rack for 5 minutes before removing the muffins from the pan.

  10. Enjoy!
