Yummy lowfat muffins, low on sugar and high on protein and taste!

Recipe Ingredients for Blueberry muffins

2 cups frozen blueberries
1/4 cup orange juice
1 teaspoon vanilla
1 cup fat free yogurt
1/4 cup egg white
2 cup whole wheat flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 cup splenda

Recipe Directions for Blueberry muffins

  1. Mix dry ingredients in a bowl, set aside. In separate bowl, blend orange juice, yogurt, egg whites, and vanilla flavoring. Stir wet ingredients into dry ingredients, just until blended (do not overmix!). Fold blueberries in gently. Distribute evenly into a 12 cup muffin tin and bake 18 minutes at 400 degrees farenheit.

  2. *** For extra Omega 3's, add 1/2 cup flaxseed meal to the batter!
