Ina Garten's recipe, but w/ lg rather than ex lg eggs

Recipe Ingredients for Blueberry Muffins

2 1/2 c flour
2 tsp baking powder
1/2 tsp salt
1/2 tsp baking soda
3/4 c butter
1 1/2 c sugar
1 1/2 tsp vanilla
4 eggs
1/4 c milk
8 oz reduced fat sour cream
2 c blueberries

Recipe Directions for Blueberry Muffins

  1. Bring eggs and butter to room temp.

  2. Preheat oven to 350F.

  3. Sift first 4 ing together. Set aside.

  4. Cream butter and sugar till fluffy.

  5. Add eggs singly.

  6. Add vanilla, milk, and sour cream.

  7. Gently stir in dry ingredients. Do not over mix.

  8. Fold in blueberries.

  9. Divide among (24) muffin cups. Bake 18-25 min.
