Blueberry muffins with a cream filling

Recipe Ingredients for Blueberry muffins

3 cup Gold Medal Unbleached All Purpose Flour
1 cup Sugars, Granulated
1 tsp Salt, Table
6 Teaspoon Baking Powder
2 large Egg, Whole
2 cup Milk, Nonfat, Fluid
1 stick Butter
2 cup Blueberries
4 tbsp Fat Free Cream Cheese
4 tbsp Cream, Sour, Reduced Fat, Cultured
1 large Egg, Whole
0.33 cup Sugars, Granulated
1 dash Salt, Table

Recipe Directions for Blueberry muffins

  1. Combine flour, sugar, baking powder and salt. Beat eggs, milk and butter. Stir liquid ingredients into dry ingredients just until moistened. Fold in the blueberries. Spoon 2 rounded tablespoonfuls into greased muffin cups.

  2. Beat cream cheese, egg, sugar and salt. Place 1 Tbsp in center of each muffin cup. Top with remaining batter.

  3. Bate at 375 fro 18-20 minutes. Cool for 10 minutes before removing from pans.
