Makes 12 servings



I substitute oatmeal (blenderized) for the flour.

Recipe Ingredients for Blueberry Muffins

1 cup blueberries
2 tsp baking powder
1/2 cup butter
1/2 cup Splenda
2 cups flour
1/4 cup honey
1/2 cup skim milk
3/4 tsp salt
2 eggs
1 tsp vanilla

Recipe Directions for Blueberry Muffins

  1. Sift flour, baking powder and salt together.

  2. In another bowl, beat butter, splenda and honey with electric mixer until fluffy.

  3. Beat in eggs one at a time, add vanilla.

  4. Alternately stir in flour and milk.

  5. When blended, fold in berries.

  6. Spoon batter into greased muffin cups.

  7. Bake in preheated oven at 350 degrees for about 25 - 30 minutes

  8. Cool in pan 10 minutes before removing.
