Tasty for breakfast or a treat. Only 104 calories per muffin.

Recipe Ingredients for Blueberry Muffins

2 tbsp. margarine, low calorie
2 oz. applesauce, unsweetened
1/4 cup sugar
3/4 cup milk, fat free
1/2 cup Splenda
2 egg whites
1 1/2 cups flour, all purpose
2 1/2 tsp. baking powder
1/2 tsp. salt
1 cup blueberries
1 tbsp. flour

Recipe Directions for Blueberry Muffins

Combine sugar and softened butter. Add Splenda, applesauce, milk and eggs. Mix well. Combine flour (except 1 Tbsp.), baking powder & salt. Add to mixture and stir to just mix, batter will be lumpy. Toss berries with 1 Tbsp. flour. Fold berries into the batter. Fill 12 muffin cups (sprayed with butter flavor Pam) 2/3 full. Spray tops of muffins w/butter flavor Pam. Bake at 375 for 20-25 mins. or until slightly browned.
