Recipe Ingredients for Blueberry muffins

375 ml buttermilk
370 g caster sugar
360 g plain flour
250 g blueberries
70 g butter, melted
1 egg
1 1/2 teaspoons baking powder
1 teaspoon salt
1 teaspoon vanilla essence
1/2 teaspoon bicarbonate of soda

Recipe Directions for Blueberry muffins

  1. Pre-heat oven to 170 degress celcius

  2. Mix dry ingredients together

  3. Mix together the egg, vanilla essence and buttermilk together.

  4. Combine the dry ingredents with the buttermilk and egg mix.

  5. Add the butter and mix well

  6. Mix in the blueberries using a wooden spoon to nit damage the blueberries

  7. Divide into muffin cases and make in a pre-heated over for 20-25 mins, until golden brown and a skewer comes out clean.
