Healthy muffins, with fruit, whole wheat flour and flaxseed.

Recipe Ingredients for Blueberry Muffins

1 1/2 cups flour
1 1/2 cups whole wheat pastry flour
4 teaspoons baking powder
1 teaspoon salt
2 teaspoons cinnamon
1/2 cup flaxseed, milled
2/3 cup milk, 2%
1/2 cup splenda brown sugar blend
2 eggs, large
4 tablespoons vegetable oil
1 banana, mashed
1/2 cup applesauce, sugar added
2 cups blueberries

Recipe Directions for Blueberry Muffins

  1. Preheat oven to 350 degrees. Spray muffin pan with cooking spray.

  2. Whisk together all dry ingredients.

  3. Whisk together all wet ingredients.

  4. Stir dry ingredients into wet ingredients.

  5. Scoop into muffin pan.
