Blueberry muffins made with whole wheat flour and Splenda

Recipe Ingredients for Blueberry muffins

1 3/4 cups whole wheat flour
1/3 cup Splenda
2 tsp baking powder
1/4 tsp salt
1 tsp shredded lemon peel
1 egg
3/4 cup milk
1/4 cup vegetable oil
3/4 cup blueberries

Recipe Directions for Blueberry muffins

  1. Combine flour, Splenda, baking powder, salt and lemon peel.

  2. In a separate bowl, combine egg, milk, oil.

  3. Quickly add milk mixture to dry mixture.

  4. Stir gently until mostly mixed.

  5. Fold in blueberries very gently.

  6. Bake at 450F for 25 minutes or until golden brown.
