Recipe Ingredients for Blueberry muffins

280 g white flour
225 g white sugar
5 g salt
15 g baking powder
100 ml extra virgin olive oil
2 eggs
120 ml low-fat milk
220 g fresh blueberries
50 g brown sugar
5 g cinnamon

Recipe Directions for Blueberry muffins

  1. Preheat oven to (200 degrees C).

  2. Grease muffin cups or line with muffin liners.

  3. Combine flour, sugar, salt and baking powder.

  4. In a separate bowl, mix together the oil milk and eggs. Mix this lightly with flour mixture.

  5. Fold in blueberries. Fill muffin cups half-3/4 full, and sprinkle with crumb topping mixture.

  6. To Make Crumb Topping: Mix together 50g brown sugar and cinnamon with fork, and sprinkle over muffins before baking.

  7. Bake for 20 to 25 minutes in the preheated oven, or until done.
