Blueberry Muffins Recipe

My own concoction for good, low fat muffins. Can substitute other fruits, at nuts, etc. -- just make the adjustment for this site.

Recipe Ingredients for Blueberry muffins

1/2 c. oat flour
1/2 c. whole wheat flour
3/4 c. white flour
2 1/2 tsp. baking powder
2 T. agave syrup
1 egg
1 c. buttermilk
2 T. oil
1 c. blueberries
2 tsp. sugar
2 tsp. cinnamon

Recipe Directions for Blueberry muffins

  1. Line muffin pan with cups and spray muffin cups with Misto. Heat oven to 400. (375 for convect bake)

  2. Mix together flours and baking powder.

  3. In a separate bowl, mix agave syrup, egg, buttermilk and oil.

  4. Add wet ingredients and mix lightly. Fold in blueberries.

  5. Spoon into muffin cups. Mix sugar and cinnamon and sprinkle on top.

  6. Bake for 25 minutes or until browned on top and toothpick comes out clean. Serve warm.
