Blueberry Muffins [KML] (serving size is 1 muffin)

Recipe Ingredients for Blueberry Muffins

1 3/4 cups blueberries
2 cups sugar
8 tbsp margarine
1 cup milk
2 tbsp melted margarine
3 cups flour
1 tbsp baking powder
2 large eggs
1 tsp vanilla

Recipe Directions for Blueberry Muffins

Mix flour, sugar, and baking powder well. Cut in margarine stick until crumbly. Reserve 1 cup mixture. To rest add eggs, milk, and vanilla. Beat until smooth. Gently stir in blueberries. Fill muffin cups 2/3 to 3/4 full. Dribble melted butter over reserved mixture and toss to make crumbs. Sprinkle crumbs on top of batter. Bake until light golden brown, 20 to 25 minutes, in preheated 350 oven.
