4 points per serving. Can reduce to 3 if you use light butter and fat free milk. The best blueberry muffin around. Only a C+ grade for nutrition due to the high sugar content.

Recipe Ingredients for Blueberry Muffins

1 1/2 cups flour, all-purpose
2/3 cup whole wheat pastry flour
2 tsp baking powder
1/2 tsp salt
2 tbsp brown sugar, packed
1/2 tsp nutmeg
2/3 cup sugar
1/3 cup butter
1 egg
2 egg whites
1/2 tsp vanilla
3/4 cup milk, low fat
1 1/2 cups blueberries

Recipe Directions for Blueberry Muffins

  1. Combine flours, baking powder and salt in a medium bowl.

  2. To make topping, combine the brown sugar and nutmeg in a small bowl.

  3. Beat the sugar and butter in a large bowl until fluffy. Add egg, egg whites and vanilla until blended. Alternately add the flour mixture and the milk and then fold in the blueberries.

  4. Bake at 400 degrees for about 25 minutes.
