I cut/substituted the oil, eggs, and sugar to make them a little healthier.

Recipe Ingredients for blueberry muffins

2 cups white flour
2 cups whole wheat flour
1 1/2 cup sugar
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
3 cups blueberries
1/2 cup egg beaters
2 cups fat free sour cream
1/2 cup canola oil
1/2 cup unsweetened apple sauce
1 teaspoon vanilla

Recipe Directions for blueberry muffins

  1. Mix eggs, sugar, dry milk, apple sauce, oil and vanilla.

  2. Add the dry ingrediants.

  3. I use frozen blueberries and they should be added at the very end and mixed lightly.

  4. Bake at 400 for 20 to 25 minutes.
