Recipe Ingredients for Blueberry Muffins

300 g Self Raising Flour
1 tsp Baking Powder
50 g Butter
80 g Caster Sugar
150 g Blueberries
2 Eggs, lightly beaten
225 ml Semi Skimmed Milk
1 tsp Vanilla Extract

Recipe Directions for Blueberry Muffins

  1. Preheat the oven to 200c/400f/gas mark 6. Grease a 12-cup muffin tin or line the cups with paper muffin cases.

  2. Mix the flour and baking powder in a large bowl. Rub in the butter until the mixture resembles fine breadcrumbs. Stir in the sugar and blueberries into this mixture.

  3. In a separate small bowl or jug, mix together the eggs, milk and vanilla extract. Pour the egg mixture all at once into the dry ingredients and mix briefly until just combined.

  4. Spoon the batter into the prepared muffin cups, dividing it evenly. Bake in the oven for about 20 mins, or until well risen, golden. Cool in the tin for 10 mins, then turn out onto a wire rack. Serve warm or cold.
