Recipe Ingredients for Blueberry muffins

1 1/2 cup whole wheat flour
1 1/2 cup flour
1 1/2 t baking powder
3/4 t baking soda
3/8 t salt
1 egg
3 egg whites
2/3 cup brown sugar
1/2 cup yogurt
1 cup orange juice
3/8 cup canola oil
1 T orange peel
2 t vanilla
2 cups blueberries
1 T sugar

Recipe Directions for Blueberry muffins

  1. Preheat oven to 400 F.Mix flours, soda, powder, salt in large bowl.

  2. Whisk egg, egg white, sugar, yogurt, oil, vanilla, juice and zest.

  3. Add wet ingredients to dry; stir until just mixed.

  4. Add berries.

  5. Fill muffin pan. Sprinkle tops with sugar.

  6. Bake 20 minutes or until browned and springy.

  7. Cool in pan 5 min, remove to wire rack.
