Taken from an ancient cookbook of my mother's, these are delicious. Maybe not as much on the healthy side, but not too bad in calories.

Recipe Ingredients for Blueberry Muffins

2 cups flour
1/2 cup sugar
1/4 cup vegetable oil
1 egg
3/4 cup blueberries
1 cup 2% milk
1/2 teaspoon salt
1 tablespoon baking powder
1 tablespoon vegetable shortening

Recipe Directions for Blueberry Muffins

  1. Preheat the oven to 400 F.

  2. In a mixing bowl, combine the flour, sugar, salt, and baking powder. Set aside.

  3. Next, in a separate bowl, mix the egg, milk, and vegetable oil.

  4. Now, mix the wet (egg, etc) ingredients and blueberries with the dry ingredients in the separate bowl. Take care not to over-mix- roughly ten to fifteen stirs are recommended.

  5. Lightly grease a muffin pan with the shortening. If you have a non-stick pan, this is unnecessary.

  6. Spoon the muffin batter evenly into the pan.

  7. Bake at 400 F for 20-25 minutes, or until golden brown.
