My mother's blueberry muffin recipe, out of Better Homes and Gardens "Homemade Bread Cook Book"

Recipe Ingredients for Blueberry Muffins

1.75 cup All-Purpose Flour
0.25 cup Sugars, Granulated
2.5 tsp Baking Powder
1 large Egg, Whole
0.75 fl oz Rice Dream Original Enriched
0.33 cup Vegetable Oil, Canola
4 tsp Sugars, Granulated
1 cup, unthawed Blueberries
1 tsp Lemon Peel

Recipe Directions for Blueberry Muffins

  1. Thaw and drain blueberries (if frozen)

  2. Stir together thoroughly the flour, sugar, and baking powder; make well in center. Combine egg, milk, and oil; add all at once to dry mixture. Stir just till moistened.

  3. Combine blueberries and 4 tsps of sugar. Fold into batter along with 1 tsp of grated lemon peel.

  4. Fill well-greased muffin pans or paper bake cup-lined muffin pans 2/3 full. Bake at 400 deg. for 20 to 25 minutes.
