A healthy blueberry muffin recipe..

Recipe Ingredients for Blueberry Muffins

1 cup Oats, Rolled, Regular Old Fashioned
1 cup skim milk
1 cup flour
1/2 cup brown sugar
1/2 cup applesauce
2 egg whites
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 cup blueberries

Recipe Directions for Blueberry Muffins

  1. Soak oats in milk for 1 hour

  2. preheat oven to 400 degrees

  3. Prep muffin pan (either spraying them or adding liners)

  4. Combine oat mixture with other liquid ingredients (egg whites/applesauce) after the hour has elapsed

  5. In a separate bowl measure and mix together all dry ingredients

  6. Combine the wet ingredients to the dry and mix until just combined - Do not over mix or muffins will be chewy!

  7. Add frozen blueberries (or other fruit), mix slightly

  8. Pour mixture into muffin pans

  9. Bake for 20-25 minutes until done
