These make a great breakfast or snack. Great warmed or toasted. Be careful if your impatience gets the better of you! The blueberries in the muffin are very hot when they first come out of the oven.

Recipe Ingredients for Blueberry Muffins

1 3/4 cups Flour
1/3 cup Sugar
2 tsp Baking Powder
1/4 tsp Salt
3/4 cup Blueberries
1 Egg, beaten with fork
3/4 cup Milk
1/4 cup Cooking Oil
1 tsp Lemon Peel, finely shredded

Recipe Directions for Blueberry Muffins

  1. Preheat oven to 450 degrees F.

  2. In a large mixing bowl, combine flour, sugar, baking powder, and salt. Make a well in the center.

  3. In a separate bowl, combine egg, milk, and oil. Add all at once to the flour mixture.

  4. Stir until just moistened. Do not overmix! The batter should be lumpy.

  5. Gently fold in the blueberries and lemon peel.

  6. Place paper liners in the muffin cups or grease the muffin tin.

  7. Fill muffin cups 2/3 of the way full.

  8. Bake at 450 degrees F for about 20 minutes or until golden brown.

  9. Remove from muffin tin and serve warm.
