Makes 24 servings



Simple blueberry muffins without butter and with healthful oatmeal. I use old fashioned oats, but quick cooking will work also.

Recipe Ingredients for Blueberry Muffins with oatmeal

2 cups flour
2 cups oats
8 teaspoons baking powder
1 teaspoon salt
1/2 cup olive oil
2 cups milk
2 eggs
2 cups dried blueberries

Recipe Directions for Blueberry Muffins with oatmeal

  1. Preheat oven to 400 degrees.

  2. Combine dry ingredients in a bowl, mix well. Add blueberries to dry mixture.

  3. Combine wet ingredients in a bowl, mix well. Add wet mixture to dry mixture.

  4. Fill muffin cups sprayed with nonstick spray about 3/4 full.

  5. Bake for about 20 minutes. Makes 24 muffins.
