From Pie in the Sky cookbook. I substituted whole wheat pastry flour for the all-purpose in original recipe. Recipe will work from 5000-8000 feet.

Recipe Ingredients for Blueberry muffins for high altitude (7000 feet)

8 oz OG Whole Wheat Pastry Flour
2 large Egg, Whole
1 1/2 cup, unthawed Blueberries
3/4 cup Whole Milk
1/4 cup Vegetable Oil, Canola
135 grams Rapadura Organic Whole Cane Sugar
5 tsp Natural Cane Turbinado Sugar
3 tsp Baking Powder
1/2 tsp Salt, Table

Recipe Directions for Blueberry muffins for high altitude (7000 feet)

Which together eggs, milk, and oil. In separate bowl whisk together dry ingredients. Fold and stir until just combined. Fold in blueberries. At 7000 feet and higher, bake in center of oven at 425 for 22-25 minutes. At 5000 feet, bake at 400 for 22 to 25 minutes.
