Fresh blueberry muffins with bisquick heart smart baking mix, flax meal and cinnamon 1 muffin equals 1 serving; yield: 16 servings

Recipe Ingredients for Blueberry muffins w cinnamon and flax

2 cups (betty crocker) bisquick reduced fat
3/4 cup sugar
2 eggs
8 oz reduced fat sour cream
2 cups fresh blueberries
2 1/2 tsp flax meal
2 tsp cinnamon

Recipe Directions for Blueberry muffins w cinnamon and flax

  1. Mix together dry ingredients, set aside.

  2. In larger bowl, mix eggs and sour cream then add in the dry ingredients until just mixed. If too dry, add a little milk to compensate. Stir in blueberries

  3. Bake in greased muffin pans at 375* for 20 minutes.

  4. Can sprinkle sugar on top.
