Recipe Ingredients for Blueberry Muffings

1 egg
1/2 c nonfat milk
1/4 c canola oil
1 1/2 c flour
1/4 c Splenda
1/4 c sugar
2 t baking powder
1/2 t salt
1 c blueberries

Recipe Directions for Blueberry Muffings

Preheat oven to 400 degrees. Beat egg and mix in milk and oil. In a separate bowl mix the dry ingredients. Stir liquid into dry ingredients, mixture will be lumpy. Fold in the blueberries. Spray 2 mini-muffin pans with PAM. Spoon in the batter and bake for 10-15 minutes.
