Be sure to use bread flour with this; it gives it a great texture, and makes up for the liquid fat replacers. Also, don't add the blueberries until the muffins are on the baking sheet- the dough gets too moist. These are best hot, but 10 seconds in the microwave works well too. Add another 1/2 cup brown sugar and some chocolate chips to make amazing chocolate chip cookies!

Recipe Ingredients for Blueberry Muffin Tops

2 1/4 cup bread flour
1/2 cup fat-free yogurt
1/2 cup unsweetened applesauce
2 eggs
1 tsp baking soda
1 tsp salt
1 tsp vanilla
1/2 cup brown sugar
1 cup frozen blueberries

Recipe Directions for Blueberry Muffin Tops

  1. Mix dry ingredients. Add cinnamon, nutmeg, ect to taste.

  2. Mix applesauce, yogurt and sugar.

  3. Add eggs and vanilla to wet ingredients.

  4. Slowly add the flour. Mix until just combined.

  5. Chill dough at least 2 hours, but 8 is best.

  6. Heat over to 375. Place teaspoon-sized scoops on a oiled (or silicon) baking sheet. Push blueberries on to top. Bakes 5-15 minutes depending on oven. Done when slightly firm to touch.
