Delicious Maine blueberry muffins. These muffins are huge - you can split the mix into more muffin tins if you want smaller muffins. It occurred to me after already making these that adding some cinnamon might be nice, but I haven't tried it.

Recipe Ingredients for Blueberry mountains (muffins)

2 1/3 cups all-purpose flour
2 2/3 teaspoons baking powder
1 cup sugar
1/2 teaspoon salt
1 cup skim milk
2 eggs
4 tablespoons melted butter
2 cups blueberries
1 teaspoons vanilla extract

Recipe Directions for Blueberry mountains (muffins)

  1. Sift together the flour, baking powder, sugar, and salt.

  2. Mix together, then add the milk, well-beaten egg and butter.

  3. Beat well, then fold in unwashed berries.

  4. Pour batter in 12 large paper-lined muffin tins.

  5. Bake at 425 for 25 minutes.
