1/2 cup White Flour, Unbleached
1/2 cup White Whole Wheat Flour
1 cup, unthawed Blueberries
0.33 cup Turbinado Sugar
3 tsp Baking Powder
1/2 tsp Salt, Table
8 fl oz Original Soymilk
1 large Egg, Whole

Recipe Directions for Blueberry mini-muffins

  1. Combine dry ingredients, then mix in the milk and egg. Add the blueberries in last, mixing them in gently right before adding the batter to the pan.

  2. Each mini-muffin is one heaping tablespoon of batter.
