Blueberry Muffins. You can substitute the sugar for splenda and regular yogurt for greek yogurt, and use low-fat sour cream to lessen calories.

Recipe Ingredients for Blueberry Lemon Muffins

2 cups flour
1/2 tsp baking powder
1/4 tsp salt
1/2 cup sugar
1/4 cup sour cream
1/2 cup yogurt
1 egg
4 tbsp canola oil
1/4 cup Juice Lemon from Concentrate
1 cup fresh or frozen blueberries

Recipe Directions for Blueberry Lemon Muffins

  1. Preheat oven to 350.

  2. Grease a muffin pan or line with muffin cups.

  3. In a large bowl combine the sugar, sour cream, yogurt, egg, oil, and lemon juice.

  4. Add the dry ingredients and gently stir till just combined.

  5. Fold in the zest and the blueberries.

  6. Scoop into a standard muffin pan, about 1/4 cup of batter per muffin cup.

  7. Bake at 350 for 25-30 minutes, or until golden brown and a toothpick comes out clean.
