Recipe Ingredients for Blueberry Lemon Muffins

1/2 cup Pure Cane Sugar, Golden Light Brown
4 tbsp Unsalted Butter
12 oz Lemon Burst
1 cup Blueberries
1/2 cup Yellow Squash Puree
1 large Egg, Whole
2 cups Gold Medal All Purpose Flour
1/4 cup Flaxseed
1 tsp Baking Powder
1 tsp Baking Soda

Recipe Directions for Blueberry Lemon Muffins

  1. Preheat oven to 350. Coat a 12-cup muffin tin with cooking spray or line with paper baking cups.

  2. In a large bowl, beat the sugar and butter with a wooden spoon. Stir in the yogurt, blueberries, yellow squash puree, egg, and 2 tsp of pure lemon extract.

  3. Add the flour, flaxseed, baking powder, and baking soda. Stir just to combine, but do not overmix-the batter is supposed to be lumpy.

  4. Divide the batter among the muffin cups. Bake until the tops of the muffins are lightly browned and a toothpick comes out clean when inserted in the center, 13 to 16 minutes. Turn the muffins out onto a rack to cool.

  5. Store in an airtight container at room temperature for up to 2 days, or wrap individually and freeze for up to 1 month.

  6. NOTE: The recipe has been slightly modified from the original.

  7. NOTE: The recipe says it yields 12 muffins, but I can never get all the batter to fit into only 12 muffin tins!
