Recipe Ingredients for Blueberry-Lemon Breafast Muffins

1/2 c whole wheat flour
1/2 c kamut flour
1/2 c flax seed meal
1/2 c dark brown sugar
1 tbsp baking powder
1/4 teaspoon salt
2 large egg whites
1/2 c unsweetened applesauce
1 tablespoon lemon zest
1/2 c of fresh lemon juice
1 c fresh blueberries

Recipe Directions for Blueberry-Lemon Breafast Muffins

  1. Preheat oven to 400. Combine all dry ingredients in a separate bowl. Combine all wet ingredients in a separate bowl. Mix dry into wet until completely blended. Carefully fold blueberries into the mixture.

  2. Bake for 25-30 minutes.
