Recipe Ingredients for Blueberry Ginger Muffins

2 cups all-purpose flour
1 tbl baking powder
1/2 tsp baking soda
1/3 cup sugar
1 tsp cinnamon
1/2 tsp ground ginger
1 egg
1 cup buttermilk
1/4 cup vegetable oil
1/2 cup dark molasses
1 cup blueberries

Recipe Directions for Blueberry Ginger Muffins

  1. Preheat oven to 400 degrees F.

  2. Stir together flour, baking powder, baking soda, salt, sugar, cinnamon and ginger.

  3. Mix egg, buttermilk, oil and molasses together well. Add liquid mixture to dry ingredients. Stir until just moistened.

  4. Gently fold in blueberries.

  5. Fill greased or paper-lined muffin cups 2/3 full. Bake for 20 minutes, or until done.
