Blueberry French Toast Recipe

Yummy, but can be time consuming - although, it's worth it in the end!

Recipe Ingredients for Blueberry French Toast

129 g hamburger buns
4 oz. fat free cream cheese
3 large eggs
1/2 cup liquid egg whites
1 cup skim milk
1/6 cup honey
1/4 cup blueberries
1/4 cup sugar
1/2 cup grape juice
1 tablespoon cornstarch
1/4 cup blueberries

Recipe Directions for Blueberry French Toast

  1. Cut buns into 1-in. cubes; place half in a baking dish coated with cooking spray.

  2. Cut cream cheese into 1-in. cubes; place over buns. Top with blueberries and remaining bun cubes.

  3. In a large bowl, beat eggs and egg substitute. Add milk and syrup; mix well.

  4. Pour over bun mixture. Cover and refrigerate for 8 hours or overnight.

  5. Remove from the refrigerator 30 minutes before baking. Cover and bake at 350 for 30 minutes.

  6. Uncover; bake 25-30 minutes longer or until golden brown and center is set.

  7. Meanwhile, in a small saucepan, combine sugar and cornstarch; stir in juice until smooth.

  8. Bring to a boil over medium heat; cook and stir for 2 minutes. Stir in blueberries.

  9. Reduce heat; simmer, uncovered, for 8-10 minutes or until berries burst, stirring occasionally.

  10. Serve with French toast. Yield: 4 servings
