Delicious and easy make-ahead casserole for breakfast

Recipe Ingredients for Blueberry French Toast

14 slices bread
16 ounce cream cheese
1 cup frozen blueberries
12 eggs
2 cups milk
1/3 cup maple syrup
1 cup sugar
2 tablespoons corn starch
1 cup water
1 cup frozen blueberries
1 tablespoon margarine

Recipe Directions for Blueberry French Toast

  1. Set bread out to dry. Cut into 1 inch cubes. Grease a 9x13" baking dish and put in half the bread cubes. Top with first cup of blueberries and remaining bread cubes.

  2. Mix together eggs, milk, and syrup. Mix well and pour over bread mixture. Cover with tin foil and refrigerate overnight (or at least 8 hours).

  3. Preheat oven to 350; remove dish from refrigerator about a half an hour before baking.

  4. Bake with foil on for 30 minutes.

  5. Remove foil and bake for another 25 - 30 minutes until nice and brown; center will be set.

  6. To make sauce, put sugar, water, and corn starch into a saucepan.

  7. Mix well and bring to a boil over medium heat. Boil for 3 minutes, stirring constantly.

  8. As mixture starts to thicken, add berries and reduce heat.

  9. Simmer for 8 - 10 minutes or until berries burst.

  10. Add margarine and let it melt.

  11. Serve over Blueberry French Toast.
