Recipe Ingredients for Blueberry Flaxseed Muffins

1 cup quick cooking oats
1 cup lowfat buttermilk
1 cup whole wheat flour
1 tsp baking soda
1/4 tsp ground cinnamon
2 egg whites
1/4 cup unsweetened applesauce
1/2 cup brown sugar
1 1/4 cup blueberries
1 tbsp flaxseed, ground

Recipe Directions for Blueberry Flaxseed Muffins

  1. Spray muffin tin with nonfat spray.

  2. Preheat oven to 375.

  3. Mix oats and buttermilk. Let sit 5 minutes.

  4. In separate bowl, mix flour, baking soda and cinnamon

  5. In another bowl, with electric mixer on medium, mix egg whites, applesauces and brown sugar.

  6. Beat in oat mixture. Stir in flour mixture. Add blueberries.

  7. Spoon into muffin tin. Sprinkle with flaxseed.

  8. Bake for 15 minutes or til done.
