Recipe Ingredients for Blueberry Flax Muffins

1/2 c. milled flaxseed
1/2 c whole wheat flour
1/2 c. quick oats
1/4 c. Brown sugar
1 tsp. Baking soda
1/2 tsp Baking Powder
1/4 tsp salt
1 tbsp. Cinnamon
1/2 cup unsweetened applesauce
2 tsp. unsweetened applesauce
6 tbsp. 2% milk
3 egg whites
1/2 tsp. Vanilla
1 cup blueberries

Recipe Directions for Blueberry Flax Muffins

  1. Mix flour, milled flax-seed, bran, sugar and dry ingredients together. Mix well. Stir together milk eggs and vanilla and stir this into batter until well moistened. Fill cupcake papers until 3.4 full ( there may be a bit of extra batter left, there usually is for me) and bake at 350* for 20 to 25 minutes.

  2. Makes 12 med muffins.

  3. ( freeze them in ziplock bag, then just pull one out each morning and will be ready to eat 20 minutes
