Recipe Ingredients for Blueberry Custard Supreme

1/2 cup blueberries, fresh
2 tbsp soy flour, (or all-purpose)
1 1/2 tbsp granulated sugar
1/8 tsp salt
1/4 tsp ground cinnamon
1/4 cup egg beaters
1 tsp lemon peel, grated
1/2 tsp vanilla
3/4 cup skim milk, (or reduced-fat)
1 tsp powdered sugar
1 spray cooking spray

Recipe Directions for Blueberry Custard Supreme

  1. Preheat oven to 350 F. Spray 1-quart souffle or casserole dish with non stick cooking spray. Distribute blueberries over bottom of prepared dish.

  2. Whisk flour, sugar, salk and cinnamon in small bowl. Add egg substitue, lemon peel and vanilla; whisk until smooth and well blended. Whisk in milk. Pour over blueberries.

  3. Bake 30 minutes or until puffed, lightly browned and center is set. Cool on wire rack. Serve warm or at room temperature. Sprinkle with powdered sugar just before serving.
