Blueberry crumble made with rolled oats and whole wheat flour

Recipe Ingredients for Blueberry Crumble

4 cups blueberries
3 tbsp maple syrup
1 tbsp arrowroot
3/4 cup oatmeal
1/4 cup whole wheat pastry flour
1/2 tsp cinnamon
2 tbsp butter (divided)

Recipe Directions for Blueberry Crumble

  1. Place the blueberries in a saucepan and toss them with 1 tbsp maple syrup and the arrowroot powder, making sure they're evenly coated.

  2. Cook the blueberries over low heat, stirring constantly, until the juices are released and the mixture begins to thicken. You may need to add a couple tbsp of water to prevent sticking.

  3. Melt 1 tsp of the butter. Brush it around an 8"x 8" baking pan. Pour in the blueberry mixture.

  4. Place the oatmeal, flour, and cinnamon in a bowl and mix thoroughly. Cut in the remaining butter until the mixture has a meal-like texture then stir in the remaining syrup.

  5. Sprinkle the crumble mixture over the blueberries and bake at 350 degrees for 20 minutes or until the topping is crisp. Cool slightly before serving.
