Medium grind cornmeal is available at some supermarkets and natural foods stores.

Recipe Ingredients for Blueberry Cornmeal Pancakes

1 1/2 c cornmeal
3/4 c flour
1/4 c sugar
1 T baking powder
1 t baking soda
1 t salt
2 c buttermilk
2 large eggs
1/4 c canola oil
1 c fresh blueberries

Recipe Directions for Blueberry Cornmeal Pancakes

  1. Whisk 1st 6 ingredents in a large bowl. Whisk buttermilk, eggs and oil in a med. bowl, add to dry ingredents, whisk to blend.

  2. pre heat oven to 200f. place baking sheet in oven. pre heat griddle over med heat, brush with melted butter, or Pam. spoon 1/2 c batter onto griddle for ea pancake. sprinkle w/ 2 T berries. cook until golden brown, bubbles on top, about 2 min per side. transfer to oven to keep warm. serve w/ maple syrup.
