Blueberry muffins made with wholewheat flour and cornmeal. Recipe adapted from Eatingwell.com to reduce calories.

Recipe Ingredients for Blueberry Cornmeal Muffins

2/3 cup all purpose flour
2/3 cup cornmeal
2/3 cup wholewheat flour
1 tbsp baking powder
1 tsp ground cinnamon
1/4 tsp sea salt
1 cup blueberries
2 egg whites
2/3 cup skimmed milk
1/4 cup honey
3 tbsps unsweetened applesauce

Recipe Directions for Blueberry Cornmeal Muffins

  1. Preheat oven to 400F.

  2. Coat 12 standard 2 1/2 inch muffin cups with cooking spray or use muffin papercups.

  3. Sift wholewheat flour, all purpose flour, cornmeal, baking powder, cinnamon and salt into a large mixing bowl and whisk all ingredients together.

  4. Toss in blueberries into dry mixture.

  5. In a seperate bowl, whisk egg whites, skimmed milk, honey, and unsweetened applesauce.

  6. Make a well in dry ingredients and add wet ingredients and mix, being careful not to overmix.

  7. Use a spoon and scoop the batter and place in prepared pan filling each muffin cup to 2/3rds full.

  8. Bake muffins on top shelf of oven until the tops spring back when touched lightly, 18 - 22 minutes.

  9. Let muffins cool in pan for 5 minutes.

  10. Loosen the edges and turn the muffins out onto a wire rack to cool slightly before serving.
