Blueberry Corn Muffins Recipe

Great for breakfast on the go or a snack. Can substitute any berry.

Recipe Ingredients for Blueberry corn muffins

1 cup all purpose flour
1 cup yellow cornmeal
1/2 cup sugar
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 cup buttermilk
1/4 cup extra virgin olive oil
1 tsp vanilla extract
1 large egg
1 1/2 cup blueberries

Recipe Directions for Blueberry corn muffins

  1. Preheat oven to 400 F.

  2. Spray 12 muffin pan with cooking spray.

  3. In large bowl mix together first 6 ingredients.

  4. In small bowl whisk together buttermilk, oil, vanilla and eggs until blended. Stir in flour mixture, and mix until moist, batter will be lumpy. Fold in berries.

  5. Spoon into muffin pans and bake 20 - 25 minutes until toothpick comes out clean.

  6. Can be frozen. Serve warm if possible.
