Recipe Ingredients for Blueberry coffee cake (reduced fat)

1 1/2 cups all purpose flour
1 tsp baking powder
1/2 tsp salt
1/2 cup apple sauce
3/4 cup sugar
2 egg whites
1 tsp vanilla
1/2 cup yogurt
1/2 tsp lemon zest
1 cup blueberries

Recipe Directions for Blueberry coffee cake (reduced fat)

  1. preheat oven 350 degrees spray bottom of pan with non-stick spray

  2. in medium bowl combine flour,baking powder,baking soda and salt

  3. in seperate bowl mix butter,sugar until light and fluffy. add egg whites stir in vanilla,yogurt,lemon peel. mix with dry ingredients

  4. set aside 1 cup batter

  5. into the 1 cup of batter mix in blueberries and spread on top layer of pan.

  6. Bake in oven for 40 minutes approximately 35-40 minutes.

  7. cool (glaze optional)
