Blueberry coffee cake is great for breakfast or a dessert. I used coconut oil because it is a good fat that helps your body burn more calories.

Recipe Ingredients for Blueberry coffee cake

1 c yogurt, non fat plain
2 eggs
3 tbsp coconut oil
1 1/2 c flour
2 tsp baking powder
1/2 tsp baking soda
1/3 c sugar
1 tsp vanilla
1 1/2 c blueberries
1/4 c flour
1/4 c brown sugar
2 tbsp coconut oil
1/4 c almonds

Recipe Directions for Blueberry coffee cake

  2. Mix all ingredients for batter folding in blueberries in last, be gentle.

  4. Combine topping ingredients.

  6. Preheat oven to 375.

  8. Butter or spray with cooking spray, 9 x 9 inch pan.

  10. Pour batter in, sprinkle topping and spread evenly over cake. Bake at 375 for 35-40 minutes.
