Blueberry Cobbler Recipe

Lighter version of a traditional favorite. (Any type of milk can be used in this recipe. For even less calories, try Silk Pure Almond.)

Recipe Ingredients for Blueberry Cobbler

3 cups blueberries
1/2 cup Splenda
2 teaspoons lemon juice
1 3/4 cup all purpose flour
1 tablespoon baking powder
2 tablespoons Smart Balance butter
1/4 teaspoon salt
2/3 cups soy milk
1/4 cup egg beaters

Recipe Directions for Blueberry Cobbler

  1. Preheat oven to 400.

  2. Grease a 1 1/2 - 2 quart baking dish.

  3. In a bowl combine blueberries, Splenda, and lemon juice. Spread mixture in the bottom of greased baking dish.

  4. Combine flour, baking powder, and salt.

  5. Using a fork, mix butter into flour mixture until mixture becomes coarse crumbs.

  6. Combine milk and egg beaters.

  7. Add to flour mixture to form a smooth dough.

  8. Spoon on top of blueberries covering as much as possible.

  9. Bake for 35-40 minutes until golden brown.
